1 egg
2 C of Bisquick or other baking mix
1/3 C. sugar
2/3 C milk
2 Tbs. vegetable oil or melted butter or margarine

Heat over to 400º
Grease the bottom of 12 medium muffin cups or line with baking cups

Beat egg in medium bowl and add remaining ingredients until moistened
Divide batter evenly among the muffin cups

Bake 15 or 18 min.

To make blueberry muffins, 3/4 to 1 C of fresh or frozen blueberries to the batter.
To make apple-cinnamon muffins stir in 1 tsp. of ground cinnamon and fold in 3/4 C of chopped apple.
Oatmeal-raisin decrease the baking mix by 1/2 C and stir in 1/4 C of quick cooking oats and 1/2 C of raisins and 1 tsp. cinnamon.
