1/2 Lb Bacon, 10-12 slices
1/2 C. Onion, chopped
2 T. All purpose Flour
2 T. Sugar
1 1/2 tsps. Salt
1 tsp. Celery seed
1/2 C. Vinegar
6 C. Potatos, cooked, sliced

Directions:
Directions:
Cook bacon till crisp, drain and crumble, reserving one-quarter cup fat.

Cook onion in reserved fat till tender. Blend in flour, sugar, salt, celery seed and dash pepper; add vinegar and one cup water; cook and stir till thickened and bubbly. Add bacon and potatoes, heat thoroughly, tossing lightly.

Garnish with parsley, pimiento and bacon curls if desired.
