4 Tbs. of butter
4 Tbs. of flour
2 C. of milk

for cheese sauce and 8 to 10 oz. of shredded or grated cheddar cheese

mix the flour and butter over medium heat until melted and blended, and ready to bubble.
Add the milk and stir until thickened.

For cheese sauce, add after the white sauce thickens.

Use the white sauce for making Scalloped potatoes, pour over slice potatoes, onions and seasonings in a casserole dish and bake for 30 to 40 min. at 350º covered. Uncover and cook an additional 15 to 20 minutes.

Cheese sauce can be used for vegetable dishes or for macaroni and cheese,( with mac and cheese, I layer the cheese sauce, macaroni and saltine crackers.

Most of these dishes will cook in 30 minutes at 350º, but you also can cook covered and then uncovered like scalloped potatoes.

This is included because I didn't know the value of making a good white sauce when I first started cooking. Once I mastered it, I learned how it can be adapted for several dishes including most any vegetable and cheese combination, even adding meat.
