3 large Valida onions, sliced
2 Tbsp. sugar
2 sleeves Ritz crackers, crushed fine
2- 4 butter, melted
6 eggs
1/2 cup milk
1 cup cheddar cheese, grated
1 cup Mozzarella cheese, grated
Pepper to taste
No salt is needed as the crackers are already salted

Directions:
Directions:
Saute' the onions in butter until tender. Sprinkle in the sugar. Stir until dissolved.
Crust: Place crushed crackers in pie plate, pour in enough butter to make the crackers form to the plate. Pour the onion mixture on top the crackers. Spread out to cover all of it. Beat the eggs, pepper, and milk together. Pour over the onions. Layer with the grated cheeses. Bake at 350º for 30 minutes.
