18 oz. package potato gnocchi
8 oz. raw bacon, chopped
4 cloves fresh garlic, minced
1 tsp. smoked paprika
14 oz. can diced tomatoes
8 oz. cherry or grape tomatoes, halved
1 tsp. sugar
2 T. heavy cream
Salt & pepper
4 large slices mozzarella (fresh if you can get it)

Preheat oven to 350 and set a large pot of water to boil. In a skillet, cook the bacon until crispy then add the garlic and smoked paprika. Stir quickly to prevent garlic from burning. Add the tomatoes and sugar, then let it come to a simmer. As the tomatoes simmer, add gnocchi to the boiling water and cook according to package directions. Drain when finished.

Turn off the heat under the tomatoes, then stir in the cream, salt, and pepper to taste. Add gnocchi, then pour into a baking dish. Top with mozzarella and bake for 10 minutes or until cheese is melted.
