8-12 lb packer-trimmed beef brisket
2 cups Lone Star Dry rub:

3/4 cup paprika
1/4 cup ground black pepper
1/4 cup chili powder
1/4 cup salt
1/4 cup sugar
2 tbsp. garlic powder
2 tbsp. onion powder
1 tbsp. cayenne pepper

Directions:
Directions:
1. The day before serving pat the dry rub into every pore on the brisket and place in a large bag or wrap tightly in plastic wrap to marinate overnight.

2. Early in the morning take brisket out of refrigerator and bring to room temperature while you start you smoker heats to 210º.

3. Smoke for 1 to 1 1/4 hours per pound. (you can add mop sauce every hour if needed).

4. Remove brisket and let sit for 20 minutes.

5. Cut the fatty top section away from the top section and the second section. Slice both brisket sections across the grain. Serve with BBQ sauce on the side and not on the meat.
