8 whole Anaheim chiles
1 1/2 lb pork loin cut into 1/2" cubes seasoned with salt
2 Tbsp chicken broth
3 cups yellow onion, diced
2 cups tomatillos, diced
3 Tbsp garlic, chopped
1/4 cup masa harina (corn tortilla flour)
1 Tbsp cumin
2 tsp oregano
1 tsp ground coriander
1 tsp kosher salt
3 cups chicken broth, low sodium
1 Tbsp fresh lime juice

Roast & peel chiles. Chop to make to cups. Sear pork on all sides in a large pot over high heat. Do in two batches, using 1 Tbsp oil per batch. Deglaze with 2 Tbsp chicken broth. Add onion, tomatillos, garlic, roasted chiles. Cover and place over medium heat until onion softens (about 10 minutes). Stir in masz harina and seasonings to coat all ingredients. Add broth and bring to a boil. Reduce heat to low and simmer for 30 minutes. Finish with lime juice right before serving. Serve with rice and garnish with sour cream and cilantro.
