Approximately 2 lbs. spinach (wilts down to 3-4 servings)
5 slices lean bacon, chopped fine
1/2 cup bacon grease
1/2 cup red wine vinegar
3/4 cup sugar
2 eggs, beaten

Directions:
Directions:
Use fresh young spinach, coarse stems discarded and leaves washed and dried well.
Heat bacon grease, vinegar and sugar. DO NOT BOIL. Add beaten eggs. Over medium heat, simmer until thickened. Cool slightly. Pour over spinach. Can add crumbled walnuts, mandarin oranges and/or crumbled blue cheese.
