3 (15 oz.) cans of pitted sour cherries, drained
3 T. quick cooking tapioca
1 c. sugar
1/4 t. almond extract
pie crust (2-crust pie)
cold butter cut into bits

Directions:
Directions:
Mix cherries, sugar, almond extract, and tapioca. Let stand 15 minutes to soften the tapioca. Line a deep dish pie pan with one crust. Pour in the filling. Dot with butter. Top with strips of crust to form a lattice. Bake at 400. Be sure and line your oven rack with foil -- this usually spills over. Bake for about 50 minutes until the crust is brown and the fruit is bubbling.
