2½ cups chicken stock
2 Tbsp butter
½ tsp salt and pepper
¼ tsp thyme
1 cup barley, pearl or pot

4 green onions, sliced ⅛" thick
1 cup carrots, diced small
¼ cup currants or craisins

Directions:
Directions:
Bring first 5 ingredients to a boil; reduce heat & simmer, covered for 30 minutes.
Stir in remaining ingredients & cook covered for 20-25 minutes or until liquid is absorbed & barley is tender.
Pack into small ramekins or ½ c dry measure & let stand 3 minutes before inverting onto plates.
