4 Cups flour
2 1/2 Cups sugar
1 tsp. salt
4 tsp. cinnamon
4 tsp. baking soda

1 Cup coconut
2 Granny Smith apples, shredded
4 cups shredded carrots
1 Cup Craisens
1 Cup pecans

2 Cups oil
6 eggs, slightly beaten
1 tsp. vanilla

Directions:

Measure all dry ingredients and mix.
Add your fruit and nuts.
Add wet ingredients, mix just enough to combine.

Use an ice cream scoop and scoop into regular size or mini muffin pan.

Bake at 375 for 20-22 minutes for regular size muffin.

You can add raisins or a different dried fruit if you like.
