1 tbs. olive oil
1 large onion, chopped
1 large red bell pepper, seeded and chopped
3 garlic cloves, minced
6 cups of reduced sodium chicken broth
1 (14 1/2 ounce) can of diced tomatoes
1/2 cup long grain white rice
1/2 pound boneless, skinless chicken breasts, cut into strips
1/2 pound large shrimp, peeled and deveined
1 cup frozen peas
1 tsp. dried oregano
1/2 tsp. saffron threads, lightly crushed
1/8 tsp. freshly ground pepper
1 ounce chorizo cut into very thin slices
1/4 cup chopped fresh parsley

Heat oil in a non-stick soup pot over medium-high heat. Add the onion, bell pepper and garlic; cook stirring occasionally until softened about 8 minutes. Add the broth, tomatoes and rice, bring to a boil, stirring once or twice. Reduce the heat and simmer partially covered, until the rice is tender about 20 minutes.
Add the chicken, shrimp, peas, oregano, saffron and pepper to the pot; bring to a boil. Reduce the heat and simmer uncovered until the chicken is just cooked though and the shrimp are opaque, about 4 minutes. Stir in the chorizo and parsley; return to a boil. Reduce heat and simmer about three minutes.
Serve.
