Ingredients: 1 1/2 pounds of skinless salmon filets 1/3 cup dry bread crumbs 1 tbsp.. lemon juice 1 tbsp. Dijon mustard 1/2 tsp. black pepper 2 tbsp. mayonnaise 1 tbsp. green onions 1 1/2 tbsp. rice vinegar 2 eggs slightly beaten 2 tbsp. finely chopped red onion 1/2 tsp. dried basil 1 tbsp. vegetable oil to brush on grill 1 tbsp. olive oil Salt to taste 1 pinch red pepper flacks (optional)

Directions:In a large bowl break up salmon into small bite-size pieces
In separate bowl slightly beat eggs
Add remaining ingredients to eggs and mix
Add eggs mixture to salmon and blend (avoid over handling)
Divide mixture into 4 equal parts and form portions into patties to fit buns.
Cover and refrigerate for about 30 minutes (Can be made the night before as long as they covered completely to avoid drying out)
When grill is ready brush grates with vegetable oil.
Place patties on grill, cover and cook turning once (Approximately, 3 - 4 minutes on each side)
Top with your favorite sandwich toppers
