3 cans fat free Chicken broth or make your own.

1 can Rotel Tomatoes

10 oz Light Velveta Cheese cut in small cubes

Directions:
Bring the first 3 ingredients to a boil. lower heat and simmer (about 45 mins.) until veggies are tender. Mash or chop in a food processor (potato masher works best for me, because I don`t have to remove it from the kettle. Turn off heat. Add the cubed cheese. When cheese is melted your soup is ready to eat. This freezes well
