1 package (18.25 ounces) plain (no pudding) devil’s food cake mix
3 T. cocoa unsweetened cocoa powder
1 1/3 c. buttermilk
½ c. vegetable oil (I use canola)
3 large eggs
1 t. pure vanilla extract

Directions:
Preheat oven to 350. Spray pan (or spritz the cupcake wrappers) with Pam. Place all the ingredients in a large bowl. Blend with an electric mixer on low speed for 1 minute, then scrape down the sides of the bowl. Beat for 2 more minutes on medium speed, scraping down the bowl as needed. Divide the batter evenly between pans (or cupcakes). Bake 2 layers for about 28-30 minutes. Cupcakes will take 15 minutes or so.
