"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Remove any fat and gristle from the sirloin and cut into strips 1/2 inch thick by 2 inches long. Season with 1/2 teaspoon of both salt and pepper. Marinate in red wine. In a large skillet over medium heat, melt the butter and brown the beef strips quickly. Push beef to the side and brown the mushrooms. Take the meet and mushrooms out of the pan. Mix the cornstarch and flour into the beef broth and add to the juices in the pan. Cook until the mixture thickens. Lower the heat and stir in the mustard. Add the meat and mushrooms back into the pan. Cover and simmer for 1 ½ hours or until the meat is tender. Five minutes before serving, stir in the sour cream, and cream cheese.
