4 to 5 ripe bananas ( 3 can work)
2 eggs
1 cup of sugar
1/2 c. melted butter, or oil or shortening
2 cups of flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1 cup chopped walnuts

Directions:

Cream the bananas, eggs,sugar and butter.
Add well-mixed dry ingredients and fold in the nuts.

Grease or spray a Bundt pan.

Bake in a 350º pre-heated oven for 45 to 50 minutes

Yes, I know banana bread can be cooked in a loaf pan, but it doesn't cook all the way through and it gets mushy. So I use a bundt pan for uniform cooking, and so it's not-too-big for slicing and serving. If you want a loaf of banana bread, use a loaf pan, but bake it 55 to 60 minutes. You can also make a streusel-topping with chopped nuts and brown sugar mixed with butter before baking, but that works better on a loaf-style bread.
