Ingredients: 1 Cup Yellow Cornmeal (not instant grits) 1 1/2 cups of milk 1 1/2 cups of chicken stock Salt & Pepper 1 C White or yellow sharp cheddar cheese 1/2 C Romano cheese 1 1/2 Dozen Shrimp 2 lbs. Bacon cut into 1/2 cubes and fried . Olive Oil Fresh Thyme, chopped Ground Cinnamon Ground Cloves (very small amount, very strong)

Directions:About the Bacon - If possible get a slab of bacon and cut into large One half inch by 1/2 inch chunks. Place in a bowl and sprinkle with ground cinnamon, ground cloves, ground time and black pepper. Use only a small amount of ground cloves its very very strong. Let's set for about an hour to two hours or better yet overnight. If you cannot buy a slab of bacon get a smoked cured thick cut bacon instead.
In a baking pan add cherry tomatoes drizzled with olive oil salt and pepper and fresh thyme and roast in the oven. They should cook until they deflate a little bit. You can also turn on the broiler for a few seconds towards the end to get a pretty color.
Bring the stock and milk to a simmer and add in grits slowly until thickened. Use more or less grits to get the consistency you want.
In a large cast-iron skillet brown the bacon until crispy on the outside. Add additional bacon fat or oil from the onset to make sure the bacon Browns.
And a large cast-iron skillet or pan place one and a half dozen shrimp sprinkled with salt and pepper and cook till brown. Turn only once so shrimp get a nice beautiful brown color. Two or three minutes on one side one or two minutes on the other. You can also sprinkle with the Cajun salt. |

Notes: When everything has cook place each item in its own separate serving dish and let people build their own shrimp and grits combo.
I start with a bed of cheese grits then add the tomatoes and bacon and then pile on the shrimp. You can garnish with chopped green onions or parsley.
