2 -3 ears of fresh sweet corn with the kernels removed, about 1 to 2 cups.
1 medium-size onion minced fine
Canola oil
3 cups of water or chicken stock
2 cups of whole milk
1 1/2 cups of yellow cornmeal
1 cup of white cheddar cheese grated
1/2 Cup of Parmesan cheese
1/4 Cup of chopped green onions, green part only
Salt-and-pepper

Directions:
In a heavy pot add your canola oil and sauté your onions until clear in tender. Add your corn and sauté for one or two more minutes. Add your water, milk and yellow cornmeal. Bring to a boil and then reduce to a simmer and cook for 30 to 40 minutes until the cornmeal has fully cooked and is soft and tender. Add in your chopped green onions,white cheddar cheese and Parmesan cheese and mix thoroughly. Add salt and pepper to taste.

Really good stuff here. Great with any breakfast entire or with seafood dishes. Use this with the Beef Medallions New Orleans Style breakfast entire.

You can add sausage or bacon to this dish to change it up. Garlic goes well also. Yum!!!!
