3 - 4 lbs. potatoes, cooked in skins
1/3 c. butter
2 tsp. salt
2 eggs, beaten slightly
1/4 c. hot milk

Filling:
4 oz. American cheese, shredded
3 egg yolks, slightly beaten
1/4 c. butter, melted
1 T. cream
1/8 tsp. cayene pepper
1/4 tsp. dry mustard
1/4 tsp. salt

Directions:
Directions:
Cook potatoes in skins, peel and mash lightly. Add butter, salt, and eggs until blended. Add enough hot milk to get a medium consistency; blend until smooth. Place in a casserole and form a mound with a depression in the center.

For the filling, combine American cheese, egg yolks, melted butter, cream, cayene pepper, dry mustard and salt; blend well and then pour in the center of the potatoes. Sprinkle paprika on top. Bake at 400 F. for 30 minutes.
