1 1/2 lbs of slab bacon diced into chunks
2 large cans of plain cooked pinto beans drained. About 4 cups maybe 5
1 Poblano Pepper diced fine
1 medium-sized onion diced fine
Juice of one lime
Chopped fresh cilantro
Salt-and-pepper

Directions:

In a large cast-iron skillet over your grill or stove top render down the bacon until crispy and then set aside making sure to save the bacon grease. Drop in the onions and pepper and sauté. when the onions are clear and the pepper is soft add the beans and bacon back in and salt-and-pepper to taste. You may need to add a splash of water or stock. Simmer the beans until heated through out and transfer to serving bowl. Sprinkle with cilantro and squeeze lime on top

If your in a hurry this dish come together real fast. It's not my original recipe but like I said it's fast and pretty good.
