Ingredients:  
1 ˝ c. Oil
2 c. Sugar
4 Eggs
2 c. Flour
3 tsp. Cinnamon
2 tsp. Soda
1 tsp. Salt
3 c. finely ground carrots
2 tsp. Vanilla
Frosting:
1 stick margarine (softened)
8 oz. cream cheese (softened/ room temp)
1 box Powdered sugar
1 c. chopped nuts (pecans)
1 tsp. Vanilla

Directions:
Directions:
Blend: Oil, sugar, & eggs
Sift Together in another bowl: Flour, Cinnamon, Soda, & Salt
Then add to egg mixture and add: Carrots & Vanilla
Bake in greased Bundt pan (or 2 round cake pans, or 13X9 pan), at 350° for 1 hour.
Cool 10 min. before removing from pan –cool completely before frosting.
For frosting beat butter and cream cheese until smooth- add sugar, vanilla and add nuts last. Spread on cake.
Note: Frosting recipe can be cut in half for the 13x9 pan and the bundt pan
