5 lbs. Ground Beef (lots of fat)
5 rounded tsp. Morton’s Tender salt
(3) 2 ½ tsp. Mustard seed
(3) 2 ½ tsp. Coarsely ground pepper
(3) 1 tsp. Garlic salt (more or less)
(3) 1 tsp. Hickory Smoked Salt

2nd day: Mix well, cover and refrigerate.
1st day: Mix well, cover and refrigerate.
3rd day: Mix well, cover and refrigerate.
4th day: ( Joyce’s recipe) Mix well. Shape into 5 or 6 loaves. Place on broiler rack on the bottom shelf of the oven. Bake at 180º for 8 hours. Turn every 2 hours.
Ruth’s recipe: Add 6-8 whole cloves of garlic to the mixture.
On the 4th or 5th day: remove garlic cloves, mix well and make into 5 – 6 loaves, and brush loaves with liquid smoke. Bake on broiler pan at 150º at the bottom shelf of the oven, turn every hour for 7 hours.
