4 c. Walnuts (or pecans)
1 ½ c. Pitted dates (I cut in half- to make sure no nut is inside)
1 ½ c. Whole red and green cherries (I half them)
1 ½ c. Candied pineapple (2 green, 2 red & 2 white) cut in 16ths
¾ c. Candied diced orange peel (or fruit cake mix- * Note* if you don’t like the bitter taste, leave this out and add more Candied cherries and/or Candied pineapple

1 c. + 2 tbsp. Sifted flour
1c. + 2 tbsp. Granulated sugar
¾ tsp. Baking powder
1 tsp. Salt

4 Eggs
1 tbsp. Vanilla
1 tsp. rum flavoring

Directions:
Directions:
Put first 5 ingredients in a Big bowl.
Mix: Sifted flour, Granulated sugar, Baking powder and Salt
Put on fruit/nut mix and mix to cover the fruit and nuts.
Beat (till lemon colored):Eggs, Vanilla, rum flavoring
Add to flour/fruit mixture, mix well and put in greased wax-paper lined greased 9x13 pan – spread evenly and kind of press down. Bake below oven center at 275º for 1 ½ hours or until it tests done.
Remove from the oven– Spread with ¼ c. Rum, brandy OR dry sherry (I use rum) while hot-- and let stand in paper ½ hour—Peel off paper – when cool cut into 5 blocks and wrap in foil. Can be frozen.
*Note* This should be made a few weeks ahead of time so the booze can mellow and evaporate.
