4–6 large smoked ham hocks
1 bunch of celery
1 whole onion
3 large carrots
2 bay leaves
Salt-and-pepper

Directions:
Place your ham hocks in a large pot and boil for 10 minutes to 15 minutes. Remove the ham hocks and discard the water. Place your hocks back into a heavy pot with all the vegetables that I had been rough cut and fill with just enough water to cover everything. Bring to a boil, put a good lid on the pot and then reduce and simmer for 4 to 5 hours. You may have to add additional water but be careful not to add too much. Remove the ham hocks and breakdown saving the smoke meat.

You can make sandwiches or serve as a main dish if your ham hocks are large and meaty. Goes great over mashed potatoes.You can also use The smoked pork in casseroles or stews. This is really good stuff.

When finished carefully save the liquid because it is fantastic stock. You can strain and freeze it and use later.
