Ingredients: 1 1/2 pounds of sweet Italian sausage. (3 to 4 links) 1 1/2 pounds of hot Italian sausage. (3 to 4 links) 4 or 5 tablespoons of red Chianti wine 2 to 3 tablespoons of balsamic vinegar. 3/4 of a stick of unsalted butter 3 to 4 cups of red seedless grapes. You can use any type of sweet seedless grape. I like the red.

Directions:In a large pot of boiling water parboil all the sausages for 5 to 7 minutes to render off some of the fat and partially cook the sausages. Remove sausages and set aside. In a heavy roasting pan melt the butter on your stovetop at medium high heat and add the grapes and wine. Sauté for 3 to 5 minutes. Add the sausage to the pan pushing them down to make sure they make contact with the bottom of the roasting pan so they will brown and put in a 500° oven for 15 minutes. After 15 minutes turn the sausages so that they will brown evenly and return to oven for an additional 15 minutes. Remove the pan and place on the stove under medium heat and drizzle the balsamic vinegar into the pan, toss and let the vinegar reduce for two minutes or so. Plate and serve immediately. |

Notes: The trick to this dish is get the very best fresh Italian sausage you can get and use super fresh sweet grapes. The red seedless grapes are fabulous for this dish. You can serve the dish on mashed potatoes, pasta or as a stand alone. Garlic toast always goes well with this dish. Total cooking time is only 30 - 45 minutes so it's really easy to whip up fast.
