1 head cauliflower - steamed or boiled until tender; in bite size pieces
6 hard boiled eggs - When done/cooled, peel eggs, rinse & separate yolks into a bowl. Then mash the yolk & cut the whites into small bite size pieces. Blend together.
1/3 C Miracle Whip (Trader Joe's or other, but don't use light mayo as it has more carbs).
3 T Mustard
3 T Pickle Relish
1/8 C onion (raw) - use more if preferred
Salt & Pepper to taste

Mix all together - Garnish w/egg slices & parsley if desired
Chill overnight

1 C cauliflower = 3 carbs vs. 37 carbs of traditional potato salad!
