Macaroni and Cheese Recipe

1 pound elbow macaroni
1 Tbsp and 1 tsp Salt
5 Tablespoons butter
5 Tablespoons all-purpose flour
1 1/2 teaspoons dry mustard
4 cups whole milk
1 egg
4ounces Monterey Jack cheese, shredded
12 ounces sharp cheddar cheese, shredded
3 slices of American cheese (optional)

Preheat oven to 325º.

Bring 4 quarts water to boil in large pot. Add macaroni and 1 tablespoon salt and cook, stirring often, for 6 minutes. Drain macaroni and set aside in colander.

Melt 5 tablespoons butter in Dutch oven over medium-high heat. Whisk in flour and mustard and cook for 2 - 3 minutes. Slowly whisk in milk until smooth. Bring mixture to boil, reduce heat to medium, and cook, whisking occasionally, until thickened to consistency of heavy cream, about 5 minutes.

Beat egg in a small bowl. Whisk in large spoonful of the hot milk and then whisk back into the pot with the milk mixture. Then remove from heat and stir in 1 tsp salt.

Off heat, stir in 1 tsp of salt and cheeses until fully melted. Stir in macaroni and pour mixture into 13 x 9-inch oven-safe baking dish. Bake, covered, for 45 minutes. Let rest 5 minutes. Serve.

I usually mix the flour and mustard together in a small bowl then pour into the pot with the melted butter.

I also usually cook the macaroni at the same time in another pot.
