4 Egg whites (room temp)
1 c. Sugar
½ tsp. Cream of tartar
FILLING:
4 Egg yolks
½ c. Sugar
Grated rind and juice (3 tbsp.) of 1 lemon.
1 ½ tbsp Butter
TOP:Whip 1 c. Whipping cream and add 2 tbsp. Of Sugar. (or use 8 oz of Cool whip).

Beat egg whites until foamy, then add cream of tartar. Beat until stiff and add sugar gradually. Beat another 15 min. (electric mixer). Bake in a 9 X 13 Greased loaf pan. Or 2 greased pie pans. Bake for 1 hour at 250°. Let stand in oven to cool (door open) for one hour.
FILLING:Cook in pot until thick- stirring a lot. Cool slightly and spread on top of cooled white part.
TOP:Whip 1 C. Whipping cream and add 2 Tbsp. Of Sugar. (or use 8 oz of Cool whip). Spread this on top of the lemon filling. Let stand in the refrigerator for 24 hours. Grated lemon rind on top of the whipped cream makes a pretty garnish.
