3 large, ripe "on the vine" tomatoes
3 ripe tomatillos
1 bunch of fresh cilantro
1/2 medium sized white onion (or red for more kick)
1 to 2 jalapeņos (1 for mild, 2 for a kick)
1/2 to 2 fresh limes
2 dashes of Salt (Pink Himalayan Salt is the best)
Fresh Ground Black pepper
2 ­ 3 dashes of Hungarian paprika
2 ­3 dashes of Everglades seasoning. (Optional)

Directions:
"One the vine" tomatoes are very important. Make sure that all of the tomatoes are still attached to the same vine. Do not detach them from the vine until ready to prepare the salsa.

Dice the tomatoes, tomatillos, onion and jalapenos (seeds and all) and mix in a large bowl.

Remove cilantro from the stems and coarsely chop. leave a little cilantro whole for garnish.

Cut the lime and add 1/2 of the juice with pulp to the mixture. If the limes are small, add juice of 1 or no more than 2 limes. Grate some of the lime peel in long pieces to use as a garnish.

Add a good pinch of himalayan pink salt, fresh black ground pepper, a couple of dashes of both Hungarian paprika and Everglades Seasoning (optional since it is made, and mainly found, in FL.)

Mix all ingredients together and chill in fridge until cool.

Then garnish with leftover whole cilantro and lime rind. And enjoy!!!!!

One afternoon during a family vacation, we all decided to have margaritas and salsa. What started as a simple lunchtime snack with family turned into a huge, boisterous competition between my cousin, Mandi, and myself. She claimed her mango salsa was the bomb. Let it be known that my tomato and tomatillo salsa recipe below was the winner. When Mandi asked for the recipe, I said it was a secret just to aggravate her (which is what cousins do to each other). Well, of course that didn't sit well with her, and after 3 or 4 margaritas we started wrestling and laughing our butts off.) Good times! So, I would like to dedicate this recipe to my cuz in crime, Mandi. There should be a warning label printed on each of us saying do not mix together. Reaction unstable. LOL

Note: If you are making salsa for a party or get together, you can prepare it the same day or prepare it the night before and let it chill in the refrigerator for up to 24 hours. Its is great either way. You can also add black beans or yellow corn to change it up. Any leftover salsa can be used to compliment any meal of your day. Add it to eggs for juevos rancheros, add on top of some cheese quesadillas for lunch or add it to some baked chicken breast for a tasty low fat and low calorie dinner. Ole!
