4 large russet potatoes
1/2 c. mayo (Hellman's or Cain's)
1/2 c. sour cream
1/2 c. shredded sharp or extra sharp cheddar cheese
1/2 c. chopped chives, fresh or dried
8 strips of thick cut bacon, cooked crisp and chopped
salt and fresh cracked pepper Or Nature's Seasoning (by Morton)

In a medium bowl whisk together the mayo and sour cream or use a hand blender, until well mixed and creamy. Add 3/4 of the chopped chives, and seasoning. Mix well.

Fold in the cheese and bacon. Cover and chill for 30 minutes

Peel and cube potatoes, about half to 1 inch pieces. Cook potatoes in salted water until fork tender. Drain and cool slightly.

Fold the cooled potatoes into the chilled dressing

Serve warm or chilled, Top with the remaining chives.
