8 potatoes, leave skin on
3/4 lb. bacon, cooked and crumbled
2 cups shredded cheddar cheese
3/4 cup mayonnaise
1/2 cup sour cream
5-6 green onions, chopped
salt & pepper, to taste

Directions:
Directions:
Scrub potatoes, pierce with knife or fork and bake at 400º 45-60 minutes.
Allow to cool then cut potatoes into small cubes and put into a greased 9x13 casserole dish. Reserve 1/2 cup cheese, 2tbsp. onion and 3 tbsp. bacon for the top. Mix the ingredients with the potatoes. Cover the top with the reserved cheese, onions and bacon. Cover and bake at 350º for 30 minutes, remove cover for the last ten minutes.
