5 lbs. Hamburger
5 tsp. Morton's Quick Salt
2 1/2 tsp. Regular Salt
2 1/2 tsp. Garlic Salt
2 1/2 tsp. Mustard Seed
1 tsp. Liquid Smoke
2 1/2 tsp. Pepper Corns
1 1/2 tsp. Ground Red Pepper or 1 tsp. Coarse Red Pepper Flakes

Mix all ingredients well in a large glass bowel, cover and refrigerate for 24 hrs. Mix again and refrigerate 24 hrs more. Make into 5 rolls and bake on broiler rack at 150º for 8 hours. Turn after 4 hours. Wrap in aluminum or plastic wrap and keep in the refrigerator.
