Ingredients: 1 c. yellow cornmeal 3/4 tsp. salt 2 eggs, well beaten 1/2 c. bacon drippings or oil 1 c. sweet milk (white homogenized or 2%) 1-16 oz. can cream style corn (2 c.) 1/2 tsp. baking soda 1/2 lb. ground beef 1 large onion, chopped 1/2 lb. rat (Colby or longhorn) cheese, grated 1 :Jalapeno pepper, seeded and chopped (opt.) extra cornmeal and drippings or shortening

Directions:Mix 2 c. cornmeal, eggs, milk, baking soda, salt, drippings and corn. Saute ground beef. Pat on paper towel to drain grease. Grease large black skillet (cast iron is good). Sprinkle some cornmeal over it in a thin layer. Brown slightly, Pour 1/2 of the batter in the skillet. Over that sprinkle the cheese evenly, then meat, then onions and finally the peppers (opt.). Pour remaining batter on top Bake for 45-50 minutes at 350º. |
