This soup also is great when you have a cold
8 cloves garlic clove, chopped
3 T olive oil
8 c chicken broth
1 T scallions/Green Onions diced [white & green parts] or 3 Tbsp sweet onion
salt & pepper to taste
1 pinch cayenne pepper
1 pinch smoked paprika
2 slices Asiago or similar Bread, toasted and cut into ½" to ¾" cubes

Cook garlic in oil until it just begins to color. Add hot stock off the heat carefully. Season soup. Bring to a boil, cook a few minutes over low heat. Turn up heat and poach the eggs in it. Remove to individual bowls placing 1 egg in each. Sprinkle each bowl with the scallions. Add toasted croutons to each bowl.
