1 pound flounder fillets
3 Tablespoons butter
1 cup PANKO bread crumbs
2/3 cup fresh grated Parmesan cheese
1/2 teaspoon dried thyme
ground black pepper to taste
Old Bay seasoning
1/2 fresh lemon, cut into three wedges

Directions:

Preheat oven to 400.

Wash flounder under cold water and pat dry with paper towels (make sure fish is very dry or it will get mushy when baking). Spray glass baking dish with cooking spray and place fillets in dish. Sprinkle Old Bay seasoning on top of the fish fillets.

Combine all remaining ingredients EXCEPT the lemon in a bowl and sprinkle on top of flounder.

Bake in preheated oven about 15-20 minutes until bread crumbs are golden brown on top. Remove from oven, squeeze fresh lemon over fillets. Carefully transfer fillets with spatula to plates.
