3 1/2 pounds chicken pieces - or whole chicken cut up
1/2 cup sesame oil
1 (3-inch) piece of ginger root, peeled and sliced into 1/4 in rounds
10 cloves garlic, mashed
1/2 cup Shaoxing wine (dry sherry if you don't have Shaoxing)
1/2 cup soy sauce
2 Tablespoons sugar
3/4 cup Thai basil leaves (optional)

Heat sesame oil in large skillet over medium heat. Add the ginger and garlic and cook until aromatic, about 1 minute. Increase the heat to medium high and add the chicken. Cook, moving the pieces around until flesh is no longer pink, about 3 minutes.

Add the Shaoxing wine, soy sauce, and sugar in a measuring cup or bowl and stir to mix well. Pour into the skillet over the chicken. Reduce heat to medium. Cover the skillet and cook, stirring or turning pieces over if desired, until liquid is reduced by half and the chicken is cooked through, 25 - 30 minutes. Stir in the basil just before serving.

If you have more chicken to cook, increase the amount of Shaoxing wine and soy sauce to 3/4 cup each. All other measurements remain the same.
