7 whole red chilies (dried & destemmed)
1/2 cup toor dal (yellow)
1/4 cup urad dal
1 tbsp. small mustard seeds
2 cups basmati rice (rinsed)
5 cups water
10-15 curry leaves
3-5 green chilies (Indian), chopped
1 small onion, chopped
1 carrot, shredded
1/3 cup vegetable oil
6 cups plain yogurt
handful chopped cilantro
sprinkle of asafrasa

Directions:
Cook the rice, and while still hot, mash with a large spoon then set aside. Heat oil in large wok pan, and add both dals and mustard seeds and fry until lightly brown. Then add chose green and red chilies and asafrasa. Add curry leaves, then some of the cilantro, and fry for 2 minutes. Remove from heat and add onion and carrots.

To the rice, add the yogurt and mix with hands until well blended. Add salt to taste (2 tbsp). Add the dal mix and stir well. Garnish with cilantro.
