Ingredients:  
Ingredients:  
1 box of bow tie or rotini pasta, cooked and drained
1/2 cup + of homemade pesto (recipe below)
1 lb boneless, skinless chicken breast, grilled and cut in chunks or shredded
1 cup of Parmesan cheese + additional for garnish
1/4 cup of toasted pine nuts
1/2 jar of sundried tomatoes packed in olive oil + a Tbs. of the olive oil
salt and pepper to taste

Scoot's Pesto
1 generous handful of fresh basil, leaves rinsed and patted dry
1/3 cup of olive oil
2 garlic cloves
1/4 cup toasted pine nuts
1/2 cup of Parmesan cheese
dash of salt and pepper

pulse all ingredients in food processor or blender until ingredients are well chopped and combined

For the pasta:
mix all ingredients together and chill. Serve room temperature, hot or cold
