about 6 to 8...maybe 10 potatoes, chopped
one envelope of onion soup mix (Lipton's is still the best, but any variety will do) Or use a 1/4 c. of soup mix from a larger container.
1/4 c of oil, preferably olive oil, but Smart Balance is a good alternative.

Increase oil or soup mix for larger quantity of potato.

Potatoes can be peeled or not, chopped, and placed in a glass casserole dish (microwave safe about 9x13). Add oil and dry onion soup mix. Mix well. Cover with plastic wrap and microwave 10 to 20 minutes, until cooked. Adjust your time according to the size and shape of your dish. Stir half way through to be sure they are all cooking evenly.
Can be baked in the oven, too. About 400˚ for 45 minutes. Might be crispier, but so much easier in the microwave. Cover with foil for the oven.
