Ingredients:  
Chicken pieces....thighs and breast , skinned, and rolled in flour
1 lb fresh mushrooms...sliced
1 large onion...chopped 2 garlic cloves..pressed
3 T butter
3 T olive oil
1/2 cup sherry...salt and pepper

Directions:
Directions:
heat butter and oil...brown chicken on all sides...reduce heat...cover and simmer for about 25 minutes
saute onion and garlic in separate pan in 1T oil and 1 T butter..add sliced mushrooms and 2 T water simmer 15 minutes

add chicken and simmer 15 minutes longer....add sherry and boil up quickly for 1 minute

I have made this and frozen it ahead of time....it was still good
