1 large zucchini cut into 3/4" cubes
1 med onion, chopped
2 t vegetable oil
3 slices bread toasted and cut into 1/2" cubes
1 c mozzarella cheese (shredded)

Directions:
Directions:
Roughly chop onions into pieces. Put oil in a large skillet and start sweating the onions. As soon as the onions start to become translucent, add the zucchini which has been cut into 3/4" cubes Stir occasionally until zucchini starts to become crisp tender. Add the mozzarella and stir until it is melted. Stir in the bread cubes until the cheese coats the cubes

This is always a favorite and has been the way we have gotten the kids to eat zucchini at a young age! Another favorite we always make at the lake and at home!
