Mise en Place ( set your ingredients before cooking as to have ample time to cook all ingredients in order of recipe)

8 oz portion Salmon
1/4 cup chopped asparagus
1/4 cup diced red onion
2 Tbsp dill
teaspoon Meyer lemon juice ( plain lemons is fine)
1 oz goat cheese
Pinch of salt and pepper to taste.
6 - 8 eggs
1/4 milk

In a bowl combine salt, pepper, Meyer lemon juice and dill. Mix together well, add salmon to the mixture and let sit for 15 mins. While your salmon is marinading you will be able to start cooking down your asparagus and onion in a skillet on medium heat for 10 mins. When finished set in a bowl to cool. In a separate bowl combine all the eggs, milk and salt & pepper to taste, mix well. Once your asparagus and onion mix has cooled add to the salmon mixture and mix well, you want your salmon to break apart in small chunks while mixing as to incorporate it throughout the mixture. Pre-heat skillet on medium-low heat , pour half of egg mixture in skillet. Let sit until you see small air bubbles on surface of omelette, then add 1/2 oz goat cheese to omelette ( breaking it apart in your hand and sprinkling it generously in the Middle of the omelette leaving about 1/2 inch space on all corners of the omelette for folding.) . After adding goat cheese add 1/2 of the salmon mixture to omelette, immediately fold sides over to close the omelette. If flipping an omelette is tough for you, I suggest covering the skillet on low heat for 1-2 min to seal the omelette and keep its moisture.
