6 c sliced cooked, peeled, potato
5 slices bacon, cooked crisp and crumbled
3/4 cup onion, chopped
2 T flour
1/4 c sugar
1 t salt
1/4 t celery seeds
1/8 t black pepper
1⅓ cup water
⅔ c apple cider vinegar

Directions:

Fry bacon in skillet & drain and crumble. Drain all by 2-3 T bacon drippings; cook onion in skillet until golden brown. Blend in flour & seasonings. Cook over low heat. Stir in vinegar and water. Cook and stir until bubbly and slightly thick. Add sugar and stir until it dissolves. Gently stir in bacon and potato slices. Serve warm.

* When reheating use 1½ t water and 1 t vinegar mix and reheat
