1 tbsp. olive oil
1/2 onion, chopped
1 clove garlic, finely minced
1 tsp. chili powder
1 tsp. cumin
1 tsp. ground coriander
1/2 tsp. cayenne pepper
1 can diced tomatoes, not drained
4 cups chicken stock or broth
6 oz. fideo pasta (short spaghetti or angel hair pieces)
1/2 cup chopped cilantro

Directions:

Heat the olive oil in a large pot over medium heat. Add chopped onion, garlic, cumin, coriander, and cayenne pepper. Cook until the onions are slightly softened and the garlic and spices are fragrant.

Add in the diced tomatoes with their liquid and the chicken stock. Bring to a boil.

Toss in the uncooked pasta, and reduce the heat to medium. Let simmer for 15-20 minutes, or until noodles are soft.

Stir in chopped cilantro. Ladle and serve.
