9” to 10” pie shell
˝ c. chopped ham or bacon
1 10 oz. stick of cheddar cheese, chopped or grated
4 eggs
1 ˝ c. milk
˝ tsp. salt
1/8 tsp. pepper
Dash of nutmeg

Directions:

Preheat the oven to 425 ˚
Bake pie shell for 5 min….watch it doesn’t shrink from the sides; bake to golden
(pre-bake is optional, depending on how crisp you want the crust)

Sprinkle ham or bacon over the baked or prepared pie crust

Blend the remaining ingredients with blender or food processor; pour into pie shell
Bake for 15 minutes at 425 ˚; reduce temp. to 350˚
Bake 15 minutes longer until top starts to brown or appears puffy.
Allow to cool, slightly

I don't know how we got started having quiche for Christmas, but it stuck! Now we can't have Christmas without it. As of this year, I think that's been more than 25 years or maybe 30.
