1 tbsp. vegetable oil
1 lb. ground chuck or ground turkey
1 clove garlic, chopped
1 cup onions, chopped
1 (14 1/2 0z.) can tomatoes, chopped, reserve liquid
1 (28 oz tomato puree
2 tsp. Italian seasoning (Emeril's Italian blend)
9 uncooked lasagna noodles
1 (12 oz.) carton cottage or Ricotta cheese
3 cups mozzarella cheese, shredded

Directions:
Directions:
In a large skillet, cook onion, garlic, and ground meat in oil until cooked through. Add tomatoes with liquid, tomato puree, and Italian seasoning. Bring to a boil, reduce heat and simmer 20 minutes, stirring occasionally.
Cook lasagna noodles according to directions on package.
Lightly grease 13 x 9 x 2 inch baking dish. Spoon 1/3 sauce in the bottom of the baking dish. Top with 3 lasagna noodles. Spoon cottage or ricotta cheese over noodles. Sprinkle 1 cup mozzarella cheese on top of cottage or ricotta cheese. Spoon 1/3 sauce over cheese. Top with 3 lasagna noodles. cottage cheese, remaining noodles, sauce, and mozzarella cheese. Bake at 350º for 30 to 40 minutes.
