2 bundles or organic multi-colored carrots
olive oil
salt & pepper

Directions:
Directions:
Heat oven to 425 degrees. Slice carrots in quarters lengthwise. Toss with olive oil, salt, and pepper in a Ziploc bag until well coated. Spread in an even layer onto a baking sheet lined with non-stick aluminum foil. Bake for 15-20 minutes, rotating carrots half-way through.
