4 Tbsp. Butter
2 Tbsp. Flour
1 C. Half and Half
˝ tsp. garlic (chopped)
1 Tbsp. Tarragon
Dash of Cayenne pepper
1 tsp. Salt
3-4 Sliced mushrooms (opt. or use canned)
1 1/2 Tbsp. Sherry (or dry white wine)
Parmesan cheese to taste.
*Cooked and cleaned (no tails) Shrimp—about 24 – sliced down the middle
Cooked pasta of your choice (I use linguine or spaghetti)

Make cream sauce by melting the butter, adding the flour, and then gradually adding the half and half… this should be pretty thin (just a little thicker than cream).. but is always thick when I make it, so I add more milk to thin it. Add spices, mushrooms and shrimp and cook until hot (shrimp will curl). Then add: 1 ˝ Tbsp. Sherry. Sprinkle with Parmesan cheese and serve.
