Ingredients: 4 cups of roasted pork 2 fresh roasted poblano peppers diced 5 cloves of minced garlic 1 whole chopped onion 1/2 stick of butter 3 tablespoons of coriander 1/2 tablespoon of cumin 1 Jar of Salsa Verde 4 cups of low-sodium chicken broth
Condiments: Chopped red onion Avocado Fresh lime juice sour cream tortilla chips Chopped cilantro

Directions:In a large cast-iron pot add the butter and onions and simmer until clear. Add the garlic and chopped up poblano pepper. Add your spices and cook for a minute or two. Add the salsa Verde, chicken stock and pork. Simmer for 30 minutes. Add salt-and-pepper to taste. You can also add some Cayenne pepper for heat or some combination of smoke chili powders for additional flavor and heat. You can also add Pasollie into the soup for a nice variation.
This is a great recipe for leftover pork or you can just take a pork roast and salt-and-pepper it and cook it a 375° oven for about 45 minutes to an hour.
Condiments are what make the soup so wonderful. Make sure you have a lot of everything to pile on. |

Notes: This is real easy and works great for leftover pork. This is my own "lazy man" recipe. it's very quick and easy. Make sure a roast your own Poblano Peppers on your stove or use your broiler. It makes all the difference.
